Best Easy Delicious Lemon Slices/Bars Recipe

If you read my last update about my recent life you may have heard me talk about a cultural chicken diet after giving birth. Well the story of getting those chickens was an annoying one. Before my parents arrived I had to go through the task of finding free range chickens (specific ones..not the usual ones you get from the supermarket). It was the most infuriating task of trying to find the specific chickens that my mother required me to get. Living in New Zealand I assumed that because they’re so big on free range animals that I would be able to find some chickens quickly. Nope! The process was much longer than I wanted andonly specific farms had chickens for sale..

I struggled for a whole month trying to find a farm that would sell me some free range chickens for a decent price.. But all the farms that I contacted only sold chickens during specific times throughout the year, and even if they had chickens at the right time a lot of them were already reserved way ahead of time… AND! The prices were very dare… I wasn’t ready to pay $90.00 for one chicken that I was going to eat! I needed at least about 5-6 of them! I was ready to give up but right as I was getting ready to quit I randomly stumbled onto Agricultural New Zealand. The chickens weren’t really listed by breeds, but from the looks of the picture they were the ones I needed. So I gave it my last shot and sent them an inquiry and hoped that they would be the one~ and to my surprise they were the first business that actually replied that they had many chickens in stock and were open for me to pick up as soon as possible! I was relieved!

Now the amount of chicken that I first got didn’t last me for the month and so I had to get some more… The wonderful owners at Agricultural New Zealand were so prompt at answering my second request and were even able to deliver the chickens to my home for me (only because they were heading out this way to visit their son). When they delivered the chickens, they also were kind enough to surprise me with a giant bag of fresh lemons from their own farm! I didn’t know what I was going to do with so many lemons but I knew I didn’t want it to go to waste. Don’t get me wrong. I love lemons!

With so many fresh lemons I wanted to make a lemon poppy seed cake, but being unable to leave the house I made do with what was already in my pantry and fridge. Hence came lemon bars/slices! Win, win! These bars/slices taste great fresh out of the oven, but I find that having them the next day really brings the lemon flavours out!

Lemon Slices/Bars

  • Prep time: 30 minutes
  • Cooking time: 35 minutes
  • Makes 24 pieces


  •  150g unsalted butter, chopped
  •  1/2 teaspoon vanilla extract
  •  1/3 cup caster sugar
  •  1 tablespoon cornflour
  •  1 1/3 cups plain flour
  •  Icing sugar mixture, to serve
Lemon topping
  •  4 eggs
  •  1 teaspoon finely grated lemon rind
  •  1/3 cup plain flour
  •  1 1/3 cups caster sugar
  •  2/3 cup lemon juice


  1. Preheat oven to 180°C/160°C fan-forced and grease a 3cm-deep, 16cm x 26cm slice pan. Line with baking paper, allowing a 2cm overhang on all sides for easy removal from pan.
  2. Place butter in a large microwave-safe bowl and melt. Set aside to cool. Stir in vanilla and sugar. Sift flours over butter mixture. Using a wooden spoon, stir until a soft dough forms.
  3. Transfer to the lined pan and press firmly. Bake for about 15 to 20 minutes or until golden. Remove from the oven and set it aside to cool.
  4. While the crust is baking- whisk the eggs, lemon rind, flour and sugar together until it’s smooth. Add the lemon juice and whisk to combine. Pour over cooled base.
  5.  With the oven at 160°C bake for another 15 minutes or until it’s just set.
  6. Cool completely in pan. Dust with icing sugar. Cut into pieces and serve!
